Wine and Knowing

Ever wondered who’s behind that perfectly paired wine at your favorite (very expensive) restaurant? Meet the sommeliers, roughly 20,000 certified professionals worldwide who bring their expertise to fine dining rooms, luxury resorts, cruise lines, wineries, importers, retail shops, and even culinary schools. It’s a career fueled by passion, though it’s not exactly a fast track to financial independence. Most certified sommeliers earn a median salary of $65,000 annually, while those climbing to the “advanced” level pull in around $90,000. At the pinnacle, Master Sommeliers, the big corks, command between $150,000 and $160,000 a year. Not bad for something most lovers of wine will do for free.

Being a certified sommelier already puts you in an exclusive club, but reaching the rank of Master Sommelier? That’s a whole different beast. As of March 2025, only about 275 people worldwide hold this coveted title, earned through the grueling gauntlet through the Court of Master Sommeliers. This isn’t a casual weekend course. The journey begins with the Introductory Sommelier Course, a two-day crash course in wine basics, followed by the Certified Sommelier Exam—a one-day test of theory, tasting, and service. From there, it’s onto the Advanced Sommelier level, a multi-day ordeal that weeds out all but the most dedicated. The peak level, Master Sommelier Diploma Examination, held just twice a year—once in North America, once in Asia.

The Master exam is a triathlon of will and mind. First, an oral theory test demands encyclopedic knowledge of wine regions, grape varieties, vintages, and even obscure spirits. Next, a blind tasting challenges candidates to identify six wines down to their region, vintage, and quirks—all in 25 minutes. Finally, a service exam puts their hospitality skills under a microscope, mimicking the high-stakes elegance of a Michelin-starred restaurant. Pass the theory, and you’ve got three years to conquer the tasting and service sections. And to let you know there is absolutely no pressure only 10% make it through. It’s no wonder Master Sommeliers are expected to blend technical wizardry, the poise of a French maître d’, and the charisma of a seasoned storyteller.

The rewards, though, go beyond the paycheck. Masters wield influence—consulting for top wineries, judging competitions, or shaping dining experiences at the world’s best tables. But the road is brutal. Years of study, countless bottles tasted (it’s a job), and a relentless pursuit of perfection define the path. For many, it’s less about money and more about prestige and the thrill of mastery.

Trivia: of those 275 Master Sommeliers, only about 28 are women—roughly 10%. That’s striking when you consider research showing women often perform men in wine evaluation. Studies suggest women of reproductive age, have a heightened sense of smell and taste. They’re wired to detect subtle aromas, like the faint floral note in a Riesling or the earthy undertone of a Pinot Noir and articulate them with stunning clarity.

A very good fine wine, remarkable priced. I’ve seen it retail recently for $17 which is still a great price for this wine.

A very good fine wine priced a tad high at $11. I’ve seen it retail recently for $20+ which is too much for this wine.

Nebbiolo Grapes

Nebbiolo is an Italian grape variety predominantly associated with the Piedmont region in northwest Italy, near the borders of France and Switzerland. Indigenous to this area, it boasts a long history of cultivation. Evidence indicates that wines made from Nebbiolo have been produced in the region since at least the first millennium AD, with the earliest recorded mention of the grape dating back to the 13th century in the vicinity of Turin.

Today, Nebbiolo is the cornerstone of several renowned wines, including Barolo and Barbaresco. These wines are notable for their clarity, often drawing comparisons to Pinot Noir in appearance. However, they stand out for their medium- to full-bodied structure and complex profile, characterized by aromas of red fruit, pronounced tannins, vibrant acidity, and an extraordinary finish. Decanting is crucial to mellow the tannins and enhance their drinkability.

Nebbiolo wines pair exceptionally well with rich, fatty dishes such as ribeye steak and meals featuring acidic components, including meat ragù and hearty pasta sauces.

Aromas of black cherry and plum; full-bodied and dry with a silky tannic finish. Pairs well with ribeye, filet, grilled vegetables, or desserts like cannoli and tiramisu. We enjoyed it with osso boco on garlic mashed potatoes – delicious. Also ideal for sipping on a shady patio on a warm afternoon.

An excellent fine wine priced slightly under the median for 92-point wines (retail ~$52).

Trivia: A Faun (Fauno in Latin) is a half-human, half-goat creature in Greek and Roman mythology with hairy legs, pointed ears, a tail, and human arms. The most famous faun is Pan, the Greek god of nature, known for playing a flute, his sexual prowess, and joking attitude.

Purplish red in color, aromas of black fruits, full-bodied, semi-dry with a tannic finish. The high tannic finish makes it a difficult sipping wine but will pair nicely with spicey, fatty foods. Try it with barbecued beef ribs or roasted pork.

An excellent fine wine at a very reasonable price. Petite Sirah is some of the best value wine on the market.

Trivia: Petite Sirah is a cross between Syrah and the very rare grape, Peloursin. It is called ‘petite’ because of its small grapes. The wine is one of the most opaque varietals known, with a cloudy look suggesting that it should be filtered but that’s just a natural characteristic of the wine.

Red Wine Retail Prices

It is time for my yearly posting on red wine retail prices in the US. The ugly part of the post is that wine prices at the retail level have increased substantially; 5-550%, depending on vintage and rating since last year, with an average increase around 20%. The 2021-2023 vintage column for the posted spreadsheet is likely representative of reality while the other columns suffer from low sampling rates for some ratings.

A 90-point red of recent vintage has a medium price around $43. Last year that same quality wine went for about $28. These are medium values for a bottle of wine, half are less, half are more. My personal rule of thumb is that the medium value is the maximum one should pay.  Additionally, at the beginning of 2024 you could easily find a 90-point red for $10-15. You may be able to still find a 90-point red in that price range, but it will take some effort. Most 90-point reds now start at $20.

As with last year, Argentina, Chile, and Spain offer the best value in red wines while France and US tend to be priced 3 to 4 times above those from South America and the Iberian Peninsula.

Trivia: Mencia grapes are only known from the Spanish and Portuguese Iberian Peninsula, producing medium-bodied aromatic red wines that will age well.
